
Bread and Butter Pudding
Bread and Butter Pudding.
Anton Mosimann is a world-renowned chef; his Bread and Butter Pudding is beyond exquisite and ever so easy to make:
250 ml Milk
250 ml Double Cream
Pinch of Salt
1 Vanilla Pod
3 Eggs
125 grams Sugar
3 Soft Bread Rolls
2 Tablespoons Sultanas, soaked in hot water and drained.
Bring the milk, cream, salt and the vanilla pod to the boil, then remove from heat. Beat eggs and sugar together in a bowl and stir in scalded milk and cream mixture.
Cut rolls into thin slices, butter them on one side and arrange in a buttered ovenproof dish, buttered side up. Sprinkle sultanas over the top, then strain milk and cream mixture over through a fine sieve.
Place the dish in a roasting pan with enough water to come half-way up the sides and bake in a pre-heated moderate oven (350F/180C) for 30-40 minutes or until puffy on top and set. Sprinkle with icing sugar, if desired, and serve.
